Compared with clarified lemon juice, puree retains more fruit solids and can contribute additional texture, body and pulp character alongside the fruit's naturally high acidity and recognizable citrus aroma.

For applications where a clean lemon profile is important, buyers may specify limits for excessive bitterness, peel particles, seed material and coarse fiber.
